  • 3/4 cup whole milk or buttermilk
  • 2 and 1/4 teaspoons instant yeast
  • 3 tablespoons honey
  • 1 large egg
  • 1 teaspoon salt
  • 2 teaspoons fresh chopped sage
  • 3 cups bread flour

Instructions

  1. Brown the butter in a light-colored skillet over medium heat until it reaches a caramel-brown color. Pour into a heatproof bowl to cool.
  2. Activate yeast by whisking warm milk, yeast, and 1 tablespoon honey. Let it sit until foamy.
  3. In a mixing bowl, combine activated yeast mixture with remaining honey, egg, brown butter (reserve some for brushing), salt, sage, and 1 cup of bread flour. Mix until combined.
  4. Gradually add remaining flour while mixing until dough pulls away from sides of the bowl.
  5. Knead the dough for about 5 minutes until soft and slightly tacky.
  6. Allow dough to rise in a greased bowl covered with plastic wrap until doubled in size (about 1.5–2 hours).
  7. Shape into rolls and place in a greased baking dish; let them rise again before baking at 350°F (175°C) for about 20–25 minutes.
