  • 6 large eggs (beaten)
  • 8 slices Colby-Jack cheese
  • 4 tablespoons soft butter (divided)
  • 8 slices sourdough bread

Instructions

  1. In a non-stick skillet over medium heat, cook the ground sausage until browned and crumbled. Drain excess fat.
  2. In the same skillet, melt 2 tablespoons of butter and scramble the beaten eggs until just set, then mix in the cooked sausage.
  3. Butter one side of each slice of sourdough bread. Layer cheese, followed by the sausage-egg mixture on one slice and top with another slice of cheese and buttered bread.
