- Simmer soaked beans for 30-45 minutes until tender; drain, reserving liquid.

- Score the salt pork and sear it in a Dutch oven until golden brown. Place it at the bottom of your bean pot.
- Layer soaked beans and diced onions around the pork.
- Combine molasses, brown sugar, mustard, salt, and pepper; pour over beans.
- Add reserved bean liquid until just covered; cover pot with lid.
