  • ½ lb salt pork (or diced bacon)
  • 2/3 cup molasses
  • ¼ cup brown sugar
  • 1 large yellow onion, diced
  • Kosher salt
  • Dijon mustard
  • black pepper

Instructions

  1. Soak the beans overnight in cold water with 1 tablespoon of kosher salt.
  2. Simmer soaked beans for 30-45 minutes until tender; drain, reserving liquid.
  3. Preheat oven to 250°F.
  4. Score the salt pork and sear it in a Dutch oven until golden brown. Place it at the bottom of your bean pot.
  5. Layer soaked beans and diced onions around the pork.
  6. Combine molasses, brown sugar, mustard, salt, and pepper; pour over beans.
  7. Add reserved bean liquid until just covered; cover pot with lid.
  8. Bake for 6-8 hours, checking periodically and stirring gently.
