- 1 recipe blueberry pie filling (about 3 cups of homemade filling)
- 1½ cups fresh blueberries (1 pint)
- ½ cup powdered sugar
- 1 Tablespoon cornstarch
- 1 teaspoon vanilla paste
- Zest and juice of 1 lemon
- 3 uncooked pie crusts (9 inches each)
- 1 egg (for egg wash)
- Coarse sugar (for topping)
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine fresh blueberries, powdered sugar, cornstarch, vanilla paste, lemon zest and juice, and ground cinnamon.
- Roll out the pie crusts on a floured surface to fit your baking sheet.
