  • 1 recipe blueberry pie filling (about 3 cups of homemade filling)
  • 1½ cups fresh blueberries (1 pint)
  • ½ cup powdered sugar
  • 1 Tablespoon cornstarch
  • 1 teaspoon vanilla paste
  • Zest and juice of 1 lemon
  • 3 uncooked pie crusts (9 inches each)
  • 1 egg (for egg wash)
  • Coarse sugar (for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine fresh blueberries, powdered sugar, cornstarch, vanilla paste, lemon zest and juice, and ground cinnamon.
  3. Roll out the pie crusts on a floured surface to fit your baking sheet.
  4. Place one rolled-out crust on the baking sheet as the base and pour the blueberry filling evenly over it.
  5. Cover with another rolled-out crust and seal edges by crimping.
  6. Optionally cut slits into the top crust for a lattice design and sprinkle with coarse sugar.
  7. Brush the top crust with an egg wash made from whisking together the egg and water.
  8. Bake for about 30 minutes until golden brown and bubbly.
