  • 1 chipotle pepper in adobo sauce
  • 3 tablespoons olive oil
  • Corn tortillas
  • Fresh cilantro
  • ½ lime, juiced
  • 1 teaspoon garlic salt
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup (1 stick) unsalted butter, melted
  • Shredded purple cabbage
  • Cotija cheese, crumbled
  • Lime wedges

Instructions

  1. Prepare the chipotle-lime sauce by blending lime juice, sour cream, mayonnaise, garlic salt, chipotle pepper, and chopped cilantro until smooth. Refrigerate.
  2. In a bowl, mix garlic powder, paprika, onion powder, cayenne pepper, thyme, basil, oregano, salt, and black pepper as your blackening seasoning.
  3. Dip fish fillets in melted butter and coat with the seasoning mix.
  4. Heat olive oil in a cast iron skillet over medium-high heat. Cook each fillet for about 2 minutes on each side until flaky.
  5. Assemble tacos by filling warm tortillas with shredded cabbage, blackened fish, chopped cilantro, Cotija cheese, and drizzle with the chipotle-lime sauce.
