  • 1 tsp olive oil
  • ⅓ cup white onion, chopped
  • 1 jalapeño, finely chopped
  • 2 15 oz black beans, drained and rinsed
  • ¾ cup tomato, chopped
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp salt
  • 2 Tbsp hot sauce
  • 6 large tortillas (burrito size)
  • 6 tostadass
  • 6 fajita size tortillas (to close the wrap)
  • ⅓ cup sour cream
  • 1½ cup cheese, shredded
  • 1½ cup romaine, shredded
  • ½ cup salsa (optional)
  • 1 avocado, sliced thin (optional)
  • 2 Tbsp cilantro, chopped

Instructions

  1. Prepare all ingredients by rinsing black beans and chopping vegetables.
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onions for about 3 minutes until translucent. Add garlic powder, chili powder, paprika, cumin, salt, diced tomatoes, black beans, jalapeños, and hot sauce; simmer for a few minutes.
  3. On a large tortilla, layer the bean mixture, cheese, sour cream, romaine lettuce, avocado (if using), and top with a tostada. Place a smaller tortilla on top and fold the edges of the larger tortilla over to seal.
  4. Heat a clean skillet over medium heat with a light spray of oil. Cook the wrap folded side down for 2–3 minutes until golden brown; flip and cook another 3 minutes.
  5. Repeat assembly and cooking for remaining wraps. Serve warm with optional toppings like salsa or cilantro.
