  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 8 corn tortillas
  • 4 cups shredded cheese (cheddar and Monterey Jack blend)
  • Spices: cumin, chili powder, salt, black pepper

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook ground beef with diced onion and minced garlic until browned. Drain excess fat.
  3. Add enchilada sauce, diced tomatoes, black beans, cumin, chili powder, salt, and pepper to the skillet. Stir and simmer for about 5 minutes.
  4. Layer half of the corn tortillas on the bottom of the prepared dish. Spread half of the beef mixture over them and sprinkle with half of the cheese.
  5. Repeat the layering process with remaining tortillas, beef mixture, and cheese on top.
  6. Bake for 25 minutes until cheese is bubbly and slightly browned.
  7. Let rest before slicing into servings.
