  • 1 cup pearl barley
  • 3 tablespoons olive oil
  • 1½ cups chopped carrots

  • 2 cups chopped yellow onion
  • 2 (32 oz) cartons low-sodium beef or chicken broth
  • Fresh herbs (rosemary and thyme)

Instructions

  1. Sear the beef in olive oil until golden brown; set aside.
  2. Sauté onions, carrots, and celery in the same pot until softened.
  3. Add tomato paste and garlic; cook briefly to release flavors.
  4. Pour in broth and seasonings; return seared beef.
  5. Simmer for 45–60 minutes until beef is tender.
  6. Stir in pearl barley; cover and simmer another 45–60 minutes until barley is cooked.
  7. Garnish with fresh parsley before serving.
