- 2 medium sweet potatoes
- 1 large yellow onion
- 1 medium head broccoli
- 1 pound boneless skinless chicken breasts
- 1/2 cup BBQ sauce (divided)
- 1 Tablespoon olive oil
- 1/4 teaspoon salt (divided)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chipotle powder (or chili powder)
Instructions
- Preheat the oven to 400°F.
- Peel and chop sweet potatoes into 1/2" chunks and the onion into 1-inch pieces. Combine them on a baking sheet with olive oil, garlic powder, chipotle powder, and half of the salt; bake for 20 minutes.
- Toss the sweet potatoes, add broccoli tossed in remaining olive oil and salt to the pan, then place chicken breasts brushed with BBQ sauce alongside. Bake for another 15-20 minutes until fully cooked.
- Shred chicken directly on the pan using forks, mix with remaining BBQ sauce, and serve in bowls.
