  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 medium head broccoli
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)
  • 1 Tablespoon olive oil
  • 1/4 teaspoon salt (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder (or chili powder)

Instructions

  1. Preheat the oven to 400°F.
  2. Peel and chop sweet potatoes into 1/2" chunks and the onion into 1-inch pieces. Combine them on a baking sheet with olive oil, garlic powder, chipotle powder, and half of the salt; bake for 20 minutes.
  3. Toss the sweet potatoes, add broccoli tossed in remaining olive oil and salt to the pan, then place chicken breasts brushed with BBQ sauce alongside. Bake for another 15-20 minutes until fully cooked.
  4. Shred chicken directly on the pan using forks, mix with remaining BBQ sauce, and serve in bowls.
