  • 2 1/2 pounds side of salmon
  • Salt and pepper (to taste)
  • 1 can pineapple slices (drained, reserve 1/4 cup juice)
  • 1/2 cup sweet chili sauce
  • 1/4 cup unsalted butter (melted)
  • 4 tablespoons hoisin sauce
  • 2 tablespoons fresh lemon juice
  • 3 garlic cloves (minced)
  • Fresh cilantro (for garnish)
  • Lime slices (for serving)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with nonstick aluminum foil.
  2. Place the salmon on the baking sheet and season with salt and pepper.
  3. Arrange the pineapple slices underneath the salmon.
  4. In a small bowl, whisk together sweet chili sauce, melted butter, hoisin sauce, minced garlic, lemon juice, and reserved pineapple juice. Pour evenly over the salmon.
  5. Bake for about 15 minutes or until salmon flakes easily with a fork. Broil for an additional 5 minutes for crispy edges if desired.
