  • 1/2 head of cauliflower (cut into bite-sized florets)
  • 2 cups panko breadcrumbs
  • 2 large eggs (whisked)
  • 2 tbsp water
  • 1/4 cup + 2 tbsp orange juice
  • 1/4 cup granulated white sugar
  • 2 1/2 tbsp vinegar
  • 1/8 cup low-sodium soy sauce
  • 1 clove garlic (minced)
  • 1/4 tsp ginger (minced)
  • 1 tsp sriracha
  • 1 tsp ketchup
  • 2 tsp cornstarch + 2 tbsp water

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Whisk together eggs and water in a bowl. Dip each cauliflower piece into the egg mixture and allow excess to drip off.
  3. Place coated cauliflower in a Ziploc bag with panko breadcrumbs. Shake until fully coated and transfer to the baking sheet.
  4. Bake for 15-20 minutes or until golden brown and crispy.
  5. While baking, prepare the sauce by combining all ingredients (except cornstarch and water) in a saucepan over low heat. Once boiling, add dissolved cornstarch and stir until thickened.
  6. Drizzle sauce over baked cauliflower before serving.
