Ingredients

  • 2 large baking potatoes
  • 200g block of feta cheese
  • 1 head of garlic
  • Olive oil
  • Fresh basil
  • Fresh lemon
  • Dried thyme
  • Dried oregano

Instructions

  1. Preheat oven to 200C (390F).
  2. Wash and cube the potatoes; par-boil in salted water for 6-8 minutes. Drain.
  3. Toss potatoes with olive oil, thyme, oregano, salt, and pepper; spread in a baking dish.
  4. Roast for 30-40 minutes until golden brown.
  5. Add the feta cheese and whole garlic head to the dish; roast for an additional 15 minutes.
  6. Mash roasted garlic and mix with lemon juice and fresh basil into the potatoes.
  7. Drizzle with honey before serving warm.
