Ingredients
- 2 large baking potatoes
- 200g block of feta cheese
- 1 head of garlic
- Olive oil
- Fresh basil
- Fresh lemon
- Dried thyme
- Dried oregano
Instructions
- Preheat oven to 200C (390F).
- Wash and cube the potatoes; par-boil in salted water for 6-8 minutes. Drain.
- Toss potatoes with olive oil, thyme, oregano, salt, and pepper; spread in a baking dish.
- Roast for 30-40 minutes until golden brown.
- Add the feta cheese and whole garlic head to the dish; roast for an additional 15 minutes.
- Mash roasted garlic and mix with lemon juice and fresh basil into the potatoes.
- Drizzle with honey before serving warm.
