  • 68 chicken drumsticks
  • 3 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 cup uncooked white rice
  • 1 and 1/3 cups low-sodium chicken broth
  • 2/3 cup water
  • 1 medium onion (chopped)
  • Fresh parsley or thyme (for garnish)

Instructions

  1. Preheat oven to 350°F.
  2. In a small bowl, mix olive oil, brown sugar, smoked paprika, garlic powder, dried thyme, dried oregano, kosher salt, and black pepper to create a paste. Coat the chicken legs thoroughly.
  3. In a medium saucepan, melt butter over medium heat; sauté chopped onion for 3–4 minutes until softened. Add minced garlic for an additional minute.
  4. Transfer onion and garlic to a baking dish; stir in uncooked rice and remaining salt.
  5. Boil chicken broth and water in the same saucepan; pour over the rice mixture in the baking dish.
  6. Place seasoned drumsticks on top of the rice along with lemon wedges. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 20 minutes until chicken is cooked through and rice is tender.
  7. Allow resting for a few minutes before serving; fluff rice and garnish as desired.
