  • 12 asparagus stalks
  • 1 ounce sun-dried tomatoes
  • 4 slices mozzarella cheese
  • Olive oil
  • Italian seasoning
  • Garlic powder
  • Smoked paprika
  • Sea salt
  • Pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season chicken breasts on both sides with Italian seasoning, garlic powder, smoked paprika, sea salt, and pepper.
  3. Cut a pocket into each chicken breast without going all the way through.
  4. Prepare filling by laying three asparagus stalks and sun-dried tomatoes on mozzarella slices; roll them up.
  5. Stuff each chicken breast with the filling and secure openings with toothpicks.
  6. Sear stuffed chicken in a cast-iron skillet with olive oil over medium-high heat for 3-5 minutes per side until golden brown.
  7. Transfer skillet to the oven and bake for 15-20 minutes until internal temperature reaches 165°F (74°C).
