  • 2 cups grated zucchini
  • 1 cup diced apple
  • 1 cup chopped walnuts

Instructions

  1. Preheat the oven to 325°F (163°C) and grease two loaf pans.
  2. Grate the zucchini and dice the apples; set aside.
  3. In a large bowl, mix flour, cinnamon, baking powder, baking soda, and salt.
  4. In another bowl, beat eggs with oil (or applesauce), vanilla extract, white sugar, and brown sugar until well blended.

  6. Fold in zucchini, apples, and walnuts into the batter; let rest for 5 minutes.
  7. Pour batter into prepared pans. Bake mini loaves for 35-40 minutes or full-sized loaves for 55 minutes, checking doneness with a toothpick.
