- 1/2 cup unsweetened applesauce
- 1 1/2 cups finely diced apples (Honeycrisp or Gala)
- 2 cups powdered sugar

Instructions
- Preheat oven to 400°F (200°C) and grease a baking sheet with nonstick spray.
- In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
- In a large bowl, mix melted butter and sugar until combined. Add egg, vanilla extract, and applesauce; whisk until smooth.
- Gradually incorporate dry ingredients into wet mixture until just combined. Fold in diced apples gently.
- Scoop tablespoon-sized portions onto the prepared baking sheet.
- Bake for about 10 minutes or until golden brown.
- While baking, prepare glaze by mixing powdered sugar with apple cider until smooth.
- Brush glaze over warm fritter bites and broil briefly for caramelization.
- Allow to cool for about 15 minutes before serving.
