  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • Boiling water (for water bath)
  • Salted caramel sauce

Instructions

  1. Preheat your oven to 350°F (180°C). Prepare a 9-inch springform pan by wrapping it in tin foil and greasing the inside.
  2. Combine graham cracker crumbs, brown sugar, cinnamon, and melted butter to form the crust; press it into the bottom of the pan.
  3. For the apple filling, slice apples and mix with brown sugar and cinnamon; layer over the crust.
  4. Beat cream cheese until smooth; add sugars, cinnamon, cornstarch, vanilla extract, sour cream, and eggs until just combined. Pour over apple layer.
  5. Make the crumble topping by mixing flour, brown sugar, cinnamon, oats, and melted butter; sprinkle over cheesecake mixture.
